Alabama White BBQ Sauce

Alabama White BBQ Sauce was made famous by Big Bob Gibson's BBQ in Decatur, Alabama. It's so popular that Bob Gibson's now bottles it and it's available in groceries across the south.

In addition all the other commercial BBQ restaurants across the south have copied the success of the sauce and have a version of their own very similar to Gibson's.

Bob Gibson Copycat White Sauce

Ingredients

2 cups mayonnaise
2 tablespoons ground black pepper
2 tablespoons salt
6 tablespoons lemon juice
6 tablespoons distilled white vinegar
4 tablespoons white sugar

Directions

In a medium bowl, combine the mayonnaise, pepper, salt, lemon juice, vinegar and sugar. Mix all together until smooth. Use to baste chicken, pork chops or ribs as they cook on the grill. Serve extra as dipping sauce!


Bob Gibson's BBQ Sauce

This BBQ sauce is very close to the sauce served in Bob Gibson's BBQ restaurant. It uses apple cider vinegar and prepared horseradish, which adds a little kick to the sauce.

Ingredients

1 quart mayonnaise
3/4 quart apple cider vinegar
1/2 cup corn syrup
1/4 tablespoon cayenne pepper
Prepared horseradish
Lemon juice
Salt and freshly ground black pepper

Directions

Place all the ingredients in a very large blender or food processor. (It may be necessary to do this in 2 batches; just add 1/2 of each ingredient and then repeat.) Blend for 1 minute, or until thoroughly combined and the mixture is smooth.

Pour the sauce into a large bowl and refrigerate. It's actually better after it has aged in the fridge for a few days.

Use when grilling chicken; brush lightly over the chicken during the last few minutes of grilling. Bob Gibson's actually dip the chicken halves in the sauce when they come out of the BBQ pit.

They don't serve it with anything but chicken in their restaurant.

This sauce is also great for dipping your chicken at the table. Set some sauce aside for passing around to your guests.

Some of my friends use it as dipping sauce for things other than chicken such as fresh veggies and steaks. It's also good on baked potatoes.

Gibson's BBQ might be missing out on some of the versatility of this BBQ sauce by reserving it just for chicken. Try some Alabama White BBQ sauce and see what you think.
