Spinach Bacon Quiche
This Spinach Bacon Quiche is simple to make and versatile enough for most any meal.
Like any bacon quiche be sure to use high quality bacon. You should aslo be sure that the spinach is squeezed ultra-dry.

Bacon Spinach Quiche
Ingredients
4 eggs
2 cups milk
1 1/4 cups shredded Cheddar cheese, divided
1/4 cup finely chopped onion
4 bacon strips, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1 (10 ounce) package frozen chopped spinach, cooked and drained
1 (9 inch) unbaked pastry shell
Directions
In a large bowl beat the eggs until they are well combined and smooth. Whisk in the milk, 1 cup of the shredded cheddar cheese, chopped onion, crumbled bacon, salt, mustard and paprika. Add the cooked drained spinach.
Pour the spinach quiche mixture into the pie shell. Sprinkle with the remaining shredded cheddar cheese.
Bake the quiche at 400 degrees F for 40 minutes or until a knife inserted halfway between the center and the edge comes out clean.
For breakfast or brunch all this bacon quiche needs is some buttered toast and assorted jams or jellies. For a main meal it's great with steamed veggies, crusty bread and a salad.
