Recipes For Pork Loin Roast

Both these recipes for pork loin roast utilize herbs to compliment the flavor of the pork loin roast. The first recipe uses dried thyme and the second is Rosemary roasted pork loin.

Herbed Pork Loin Roast

This roast pork loin is very easy to prepare. Since it has potatoes all you need is a vegetable side dish and a salad and you have an extra special meal.

Ingredients

6 medium potatoes, peeled and quartered
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1 1/2 teaspoons chopped fresh chives
salt and pepper to taste (For the potatoes)
1 (4 pound) boneless pork loin roast
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste (For the roast)

Directions

Preheat your oven to 350 degrees F.

In a pot with enough water to cover, boil the potatoes for about 10 minutes. Drain, cool, and place in a bowl. Toss with olive oil, 1/2 teaspoon thyme, 1/2 teaspoon garlic powder, chives, salt, and pepper.

Rub the pork loin roast with 1 teaspoon thyme, 1 teaspoon garlic powder, and onion powder. Sprinkle with salt and pepper.

Place the roast on a rack in a shallow roasting pan, and cook 50 minutes in the preheated oven. Arrange the potatoes around the roast, and continue cooking 50 minutes, to an internal temperature of 150 degrees F (70 degrees C).

Remove the roast from the heat, cover with foil, and let sit 15 minutes before slicing. The temperature of the roast will rise to 160 degrees during the resting period.

This dish puts out a wonderful aroma and is a great meal for family or guests!


Rosemary Roasted Pork Loin

I have a love/hate relationship with rosemary. This pork loin roast is in the love part of the equation!

Ingredients

3 cloves garlic, minced
1 tablespoon dried rosemary
salt and pepper to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
1/2 cup white wine

Directions

Preheat your oven to 350 degrees F.

Crush the garlic with rosemary, salt and pepper to make a paste.

Pierce pork loin roast with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.

Place the pork loin into oven for 2 hours, turning and basting with pan liquids.

After 2 hours remove loin roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve the roast with au jus.
