What could be more heavenly than delicious pork roast?

One of my favorite pork roast recipes is not really a pork recipe at all. I just salt and pepper the roast, place it in the oven at 350 degrees and roast it up to 155 degrees internal temperature.

Sliced thin and on a sandwich with just mayonnaise it's delicious.

Types of Pork Roast

Roasts can come from many different parts of the hog.

The tenderest cuts of pork come from the center of the back, or loin.

The loin is along either side of the spine of the pig and actually reaches from the shoulder to the hip. However the center of this wholesale cut is where the leanest and most tender roasts are cut from.

These include pork tenderloin the pork loin roast. The pork loin roast can be turned into a rack of pork or a crown pork roast. These pork loin roasts are best cooked with a dry heat cooking method.

They WILL be tough and dry if over cooked.

It's best to use a thermometer and remove the roast from the oven right before it reaches optimum temperature. Let the roast sit for a few minutes before carving and you will have the juiciest roast possible.

As you move away from the center of the backbone towards the rump or shoulder the cuts become fattier and bonier. These are still delicious roasts but considered lesser quality. It's a matter of opinion I guess. But not mine!

Roasts cut near the shoulder are called shoulder or arm roasts and contain more fat and or bone. They are a little tougher and require a moist cooking method and longer roasting time for optimum tenderness.

I think the flavor is better, however, and the longer cooking time allows any sauce or seasoning used to penetrate deep into the meat. These cuts can be roasted covered with vegetables or herbs to enhance the flavor even further.

Cuts from the rump and hindquarters of the hog fall into the same category as roasts from the shoulder.

In my humble opinion you can't go wrong with any cut of roast. Just match up your cooking method (Wet or Dry) to the type of pork roast.
