Pork Ribs
Pork ribs are a favorite pork cut all over the world. In the U.S they are most associated with BBQ but this versatile cut is suitable for almost any cooking method. Delicious! In your grocery you will find three different cuts of ribs. Pork spare ribs, baby back ribs and country style ribs.
Country Style RibsCountry style ribs are not really ribs at all. They come from the loin section of the piggy. They are cut from the shoulder closest to the loin or are actually split pork chops. I guess they are in the category of "Canadian Bacon", which is not really bacon at all but pork loin cured and smoked. They are a favorite of mine however and they are super par-boiled and then finished on the grill basted with vinegar based barbecue sauce. Baby Back RibsBaby back ribs are from the loin of the piggy. Just like pork chops. They are usually small in size coming in at two pounds are under. Baby back ribs are extremely tender and cook fast. They are comparatively expensive, however, due to their popularity. Spare RibsSpare ribs are from the belly of the pig. The same as bacon. If you can imagine a rib section of the pig going from the backbone to the sternum baby back ribs would be closest to the backbone and spareribs closest to the sternum. Pork spare ribs are the cut of choice for most commercial barbecue restaurants and are a required item at barbecue competitions. Barbecue is not the only method of cooking spare ribs, however. One of the best pork dishes I ever had was broiled spare ribs that my Mom cooked. I feel sure that she pre-cooked them in some manor before broiling but goodness they tasted great. Spare ribs have more fat and meat than baby back ribs and even though they're not as tender initially if they are cooked properly they are fall off the bone delicious. Let's get to cookin' some ribs!
