Oven Baked Pork Chop Recipe
This Oven Baked Pork Chop Recipe is an unusual pork chop recipe because it is topped with roasted red peppers and then topped with a lemon mushroom white sauce before being oven baked.

Oven Baked Pork Chop Recipe with Roasted Red Peppers
Ingredients
1 cup all-purpose flour
1 cup seasoned breadcrumbs
2 eggs
1 tablespoon water
6 (6 ounce) center-cut pork loin chops, about 1 inch thick
1/2 cup vegetable oil
1 (7 ounce) jar roasted red bell peppers, drained and sliced
4 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 cup sliced fresh mushrooms
1/2 cup lemon juice
salt and freshly ground black pepper
Directions
Preheat your oven to 350 degrees F. Line a baking pan with foil or coat it with nonstick spray.
Combine the flour and the breadcrumbs in a shallow bowl. In a small bowl, beat the eggs and water together.
In a large skillet, heat the vegetable oil over medium heat. Dip the center cut pork chops in the egg mixture and then dredge in the flour and crumb mixture. Arrange the chops in the hot skillet.
Lightly brown the pork chops until they are golden brown on both sides and cooked through. Remove the pork chops from the skillet and place on the prepared baking pan. Top the pork chops with strips of roasted red peppers and set aside.
In small saucepan melt the butter over medium heat. Slowly add the flour, stirring with whisk until light brown. Slowly whisk the milk into the flour, and continue whisking until sauce thickens. Remove the sauce from the heat and stir in the mushrooms and the lemon juice. Season to taste with salt and pepper.
Evenly top each pork chop with the lemon mushroom white sauce.
Bake in preheated oven until golden brown, about 15 minutes.
You would think that the lemon juice would break the white sauce but it works out fine and creates a delicious lemony flavor. Even though it's a little different this is an extremely good Oven Baked Pork Chop Recipe.
