Liver and Onions Recipe
A liver and onions recipe that will turn liver haters into liver lovers! Liver is actually good for you and the onions make a perfect companion with it. Just don't overcook the liver.

Onion Smothered Liver
Ingredients
3 tablespoons butter
1 onion
2 teaspoons white sugar
1 pound pork livers
1/4 cup all-purpose flour
1 tablespoon butter
Salt and pepper to taste
Directions
Cut the onion in half and peel. Cut each half into thin slices.
Melt the butter in a medium skillet over medium heat. Stir in the onion and saute until it's softened. Stir in the sugar and continue to cook until the onion caramelizes.
Rinse the liver and remove any thin outer membrane. Slice the liver into 1/4 to 1/2 inch thick slices.
Heat the remaining butter in a medium skillet over medium heat
Dredge the pork liver slices in flour and brown in melted butter for about 1 to 1 1/2 minutes per side. Remove from the heat and season to taste with salt and pepper.
Serve the liver smothered with the caramelized onions.
This recipe is company perfect. The sugar takes away any bitterness the liver might have and the onions are superb. If you have friends that say they don't like liver serve them this liver and onions recipe.
