Ham Salad Recipes
Ham Salad Recipes are usually made from leftover ham roast or ham steak.

Ham and Spinach Salad
Ingredients
3 cups cooked ham, cubed into medium dice
12 ounces baby spinach, cleaned
1/2 medium cantaloupe, diced
1/2 cup peaches, fresh or canned, diced
1 small red onion, thinly sliced
3 tablespoons olive oil
2 tablespoons fresh orange juice
2 teaspoons raspberry vinegar
1 teaspoon whole grain mustard
Kosher salt and ground black pepper
Directions
Whisk together the orange juice, raspberry vinegar, whole grain mustard and the kosher salt and black pepper. Slowly add the olive oil, whisking constantly, 1 tablespoon at a time.
In a large bowl, combine the baby spinach with the diced ham, cantaloupe and peaches. Drizzle the salad with half of the dressing and toss the ingredients.
Take apart the sliced red onion so all the rings are separated and top the salad with them, then drizzle the remaining salad dressing over the onions.
Serve immediately.

Food For Thought - This salad is perfect when all the ingredients are available. If winter lasts longer in your neck of the woods, make substitutions based on what is in season.
You can also enhance the raspberry vinegar in the dressing by throwing a handful of fresh raspberries around the salad as a garnish.
