Ham Salad Recipe
This Ham Salad Recipe is a fast and easy way to use leftover holiday ham or ham steaks. Dice it really small to use it as a spread with chips or toasted pitas, a little larger dice would be better for a sandwich.

In a pinch, I've put all the vegetables and the ham in a food processor for a fine grind and served it with crackers.
Ham Salad Recipe
Ingredients
2 pounds smoked boneless ham, diced
1 cups mayonnaise
1 small red or green bell pepper, diced
2 stalks celery, diced
1 small onion, finely diced
1/2 cup sweet pickle relish
1/2 teaspoon dry mustard
1/4 teaspoon ground black pepper
kosher salt to taste
Directions
Whisk together the mayonnaise with the sweet pickle relish, dry mustard and ground black pepper. Stir in the diced ham, celery, bell pepper and onion.
Season the mixture to taste with salt.
This is best refrigerated overnight to blend all the flavors, but if you don't have that much time, make sure it gets refrigerated at least until it is chilled throughout.
Serves 8 to 10 as a dip or spread
Food For Thought - This recipe is easily expanded by increasing the amount of mayonnaise to 2 cups and adding another half cup of the sweet pickle relish.
If you like your ham salad a little spicier, add a dash or two of Tabasco and a pinch of cayenne pepper, and you can always substitute dill pickle relish instead of the sweet.
Good To Know - Ham is naturally salty, so it's best to taste the final mixture to determine how much salt you might want to add. If you're not a salt nut, the flavor of the ham might be enough for you, but don't forget that with all that mayonnaise, the salad might be too bland without it.
