Ham Casserole
Once you serve this ham casserole you'll get requests for it again and again. The casserole is ideal for brunch buffets, family gatherings or as a complete meal with a salad and some crusty bread.

Cheddar and Potato Casserole With Ham
Ingredients
1 (24 ounce) package frozen O'Brien hash brown potatoes
2 cups cubed fully cooked ham
3/4 cup shredded Cheddar cheese, divided
1 small onion, chopped
2 cups sour cream
1 (10.75 ounce) can condensed cheddar cheese soup, undiluted
1 (10.75 ounce) can condensed cream of potato soup, undiluted
1/4 teaspoon pepper
Directions
Preheat your oven to 350 degrees F.
In a large bowl combine the potatoes, cubed ham, 1/2 cup of the shredded cheddar cheese and chopped onion. In another bowl combine the sour cream, cream of cheddar and cream of potato soups and the pepper. Add this mixture to the potato mixture and mix well.
Transfer to a greased 3-qt. casserole dish. Sprinkle the top of the casserole with the remaining shredded cheddar cheese.
Bake the casserole, uncovered in the preheated oven for 60-65 minutes or until it's bubbly and the potatoes are tender. Let the casserole stand for 10 minutes before serving.
This is a great basic one-pot ham dish but it can be adjusted many ways that will make it your own. Change it up any way you like. It can be served for breakfast, brunch, lunch or dinner. A totally yum-yum ham casserole recipe!
