Easy Pork Chop Recipes

This pork chop recipe has onions that are slowly sautéed until heavily browned gradually releasing their sugar, which gives them a natural sweetness.

This process is called caramelizing, and is used here with thick loin pork chops and apple cider to make an easy pork chop skillet dinner.

See if you can find sweet onions for this easy recipe. Depending on the season, you should be able to find Maui, Vidalia or Sweet Texas varieties, although any yellow or brown type will do.

White and red onions are best left for other uses.

Easy Pork Chops With Caramelized Onions

Ingredients

4 pork loin chops, about 1/2 inch thick
2 tablespoons olive oil
2 large sweet onions, sliced into thin strips
1 1/2 tablespoons seasoning salt, such as Lawry's
1 teaspoon ground black pepper
1/4 cup apple cider
1/4 cup apple cider vinegar
kosher salt and ground black pepper to taste

Directions

Mix together the seasoning salt and the black pepper. Season both sides of each pork chop, making sure they are well covered.

Heat the olive oil in a large skillet and brown the pork chops on both sides. Remove the browned chops to a platter and keep warm.

Add the sliced sweet onions to the same skillet and stir them so they are well coated with the olive oil. Sauté them until they begin to brown, stirring frequently.

Mix the apple cider with the apple cider vinegar. Pour half this mixture into the skillet and continue to brown the onions. The volume should decrease as the onions cook down.

When the liquid has evaporated, season with a little kosher salt and black pepper, then add the remaining apple liquids and the browned pork chops to the skillet.

Cover the pan and simmer over low heat until the pork chops are tender and the last of the liquid has evaporated, about 30 minutes. Serve the pork chops with the caramelized onions on top.

Serves 4

Good To Know - It's not necessary to go out and buy apple cider and cider vinegar, but if you have them on hand, it makes this dish just so much richer.

You can also use 1/2 cup apple juice, chicken or beef broth, or even plain water.
