Easy Pork Chop Recipe

This quick and easy pork chop recipe makes its own barbecue sauce right in the skillet while the chops are simmering.

You can make it as spicy or piquant as you like, but the basic ingredients have enough crunch and color for even the pickiest eaters.

The recipe calls for pork loin chops, but I've also used boneless pork loin and boneless pork chops when I find them on sale.

You can take advantage of economical family pack sizes and double the recipe, freezing half for later.

Easy Pork Chops Skillet Barbecued

Ingredients

4 bone-in pork loin chops, about 6 ounces each
2 tablespoons olive oil
1 medium green bell pepper, seeded and chopped
1 small yellow onion, chopped
3 stalks celery, chopped
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup chicken broth
2 tablespoons chili powder
kosher salt and ground black pepper

Directions

Season the pork chops with the kosher salt and black pepper. Heat the olive oil in a large skillet and brown the chops on both sides. Remove the chops to a platter and keep warm.

To the same skillet, add the chopped green bell pepper, the chopped onion and chopped celery. Sauté the vegetables until they are soft, but not browned.

Whisk together the ketchup with the brown sugar, chicken broth and the chili powder. Pour the mixture into the skillet and blend it with the sautéed vegetables.

Let the liquid simmer for about a minute, then put the pork chops back in the skillet, reduce the heat to low and cover the skillet. Simmer the pork chops about 30 minutes, until the meat is tender. Remove the chops to a heated platter and pour the sauce over them.

Serve hot.

Food For Thought - These juicy pork chops and their sauce go well with mashed potatoes. Buttered fettuccine makes another alternative.

If you like things a little spicier, add a few dashes of Tabasco or cayenne pepper to the mix, and I personally prefer chili sauce over ketchup to add a little spark.

You could also add a cup of your favorite BBQ sauce to ramp up the flavor of this Easy Pork Chop Recipe.
