Barbecued Crockpot Pulled Pork Recipe
Slow simmering enhances many meats, but maybe none as much as this Crockpot pulled pork recipe.
Juicy, tender chunks of pork are easily pulled into shreds, drenched in barbecue sauce and ready for your favorite sandwich or just plain piled high on a plate.

This recipe features lots of onions, barbecue sauce and the spicy scent of cloves.

Barbecued Crockpot Pulled Pork Recipe
Ingredients
4 pounds pork roast, trimmed and tied
2 yellow onions, sliced
1 yellow onion, chopped
5 whole cloves
2 cups of water
1 bottle (16-ounces) barbecue sauce
Kosher salt and ground black pepper to taste
Directions
Have the butcher tie the pork roast for you. It should be well trimmed of excess fat. If you find a pork roast already tied in netting, it will save you some time. Look for a pork roast that already has the bone removed, so you don't have to deal with it in the slow cooker.
Season the pork roast with the kosher salt and black pepper on all side. Stick the whole cloves randomly all over the port.
Place one of the sliced onions in the bottom of the crockpot and put the seasoned pork roast on top of it. Cover the roast with the other sliced onion and fill the crockpot two thirds of the way up.
Cover the crockpot and turn to low, cook the pork roast for 8 to 10 hours.
When the roast is tender, remove it from the crock pot. Remove the whole cloves from the roast and discard the crockpot of the onions and water.
When the pork roast is cool enough to handle, use 2 forks or your fingers to pull it apart until the whole roast is shredded. Return the pulled meat to the crockpot and add in the chopped onion and the barbecue sauce. Cover the pot and simmer the pork roast on high for another 1 to 3 hours, or until the onions are soft.
Food For Thought - If you want to make pulled pork "North Carolina style", cook the pork roast all the way in the water and onions, maybe about 12 hours, then shredded it as noted above and serve it plain, with barbecue sauce served on the side.
Good To Know - The roasted pork can be used for sandwiches, stuffed into pita bread or rolled up into taquitos. If you and your family or guests don't eat it all at once, consider yourself lucky - and start thinking about ways to use the leftovers!
