Crock Pot Pork Roast
This crock pot pork roast has a definite Puerto Rican style with the cumin, ancho chile and oregano seasonings. The crock pot makes the roast easy and it comes out very tender and flavorful. Delicious!
Pernil Pork Roast Crock PotIngredients4 cloves garlic Place the garlic, onion, oregano, cumin, chile pepper, salt, and pepper into a blender. Pour in the olive oil and vinegar. Puree until smooth. Spread this mixture all over the pork loin, and place into a slow cooker. Cook on Low until the pork is fork tender, 6 to 8 hours. When ready, cut the pork into chunks, or shred; garnish with lime wedges to serve. Even though this roast recipe calls for pork loin a shoulder roast would be a good substitute and a little less expensive. The crock pot is an awesome tool and I use mine on a regular basis, however this roast would be just as good done in the oven. Of course cooking time would have to be adjusted. I always use a meat thermometer for oven roasts and cook the roast to 155 degrees. The leftovers are super if you happen to have any. Great for a taco dinner the following night.
