This one has fresh pork chops slowly cooked with potatoes and green beans - its dinner in a pot!

I use whole peeled russet potatoes, but you can use some of the baby potatoes that are in the markets now. You can even mix yellow, red and white baby potatoes for a colorful combination.

If green beans aren't your favorite, try substituting corn kernels or broccoli, or maybe use all three veggies - why not?

Fast And Fabulous Crock Pot Pork Chop Recipe

Ingredients

1 1/2 pounds boneless pork chops
4 russet potatoes, peeled and cubed
1 can (10.75 ounces) cream of mushroom soup
1 can (14.50 ounces) green beans
1/4 cup chicken broth or water
1 sprig fresh rosemary or 1 teaspoon dried
Kosher salt and ground black pepper

Directions

Season the pork chops with the kosher salt and black pepper.

Whisk together the chicken broth and cream of mushroom soup and pour it in to the crockpot or slow cooker. Add the pork chops, cover the pot, and simmer on low for 5 hours.

Add the cubed potatoes and rosemary sprig, and then cover the pot and cook for 2 hours on high heat. Add the green beans about 15 minutes before serving and simmer just until they are heated through.

Serve the pork chops surrounded by the potatoes and green beans and pour the cooking juices over the top.

Serves 6 to 8

Food For Thought - This makes an equally good stew. Just cut the pork chops into bite-sized pieces.

Add 2 large carrots, peeled and cut into 1 inch pieces, 1 medium onion chopped and 2 stalks of celery, cut into 1 inch pieces. Use 1 cup of frozen peas instead of the green beans, added during the last 30 minutes of cooking, and increase the chicken broth to 1/2 cup.

Serve with hot biscuits!

Good To Know - Pork chops come in a variety of thicknesses. The very thin cuts are generally better for quickly sautéing.

The thicker pork chops are better for baking and grilling. The thicker pork chops are generally better for crockpot recipes and allow all the juices and flavors to develop over a long cooking period.

The liquids used in slow cookers keep the pork from drying out.

On Your Own - You can save a little money by purchasing regular bone in pork chops and removing the bones yourself. It's easy and doesn't affect the cooking time or any of the measurements in the recipe.
